Located in the northern part of Italy, the South Tyrol autonomous province could be called the homeland of the so-called German-speaking Italians. As strange as it may sound, the region has nothing in common with anything typically Italian. Along with the breathtaking heights and extreme winter weather, South Tyrol features an exceptional combination of cultures – Italian, Austrian, and even Swiss. So does the local cuisine: delicious pasta and aromatic pizza perfectly coexist with succulent meats and hearty stews. Almost every dining venue can boast its very own speciality and has a wide range of delicacies to offer. The Michelin-starred restaurant Kuppelrain is the ideal place of high-quality food and excellent homemade produce. Most of the dishes from their menu are made with local ingredients and served in the most exquisite way. Take a look at one of their favorite recipes and feel the taste of grande cuisine.

Venosta Valley apricot dumplings with vanilla sauce

Venosta Valley apricot dumplings Venosta Valley apricot dumplings

Sweet and flavorful, Tyrolean apricot dumplings present a real culinary pleasure. Thanks to the extensive apricot orchards, the juicy fruit is an important ingredient of most local dishes. Its soft sweetness and slightly fluffy skin go wonderfully together with tender dough and crunchy coating. Served both as a main dish or a dessert.

Cooking directions

Ingredients

  • For the dumplings: 500 g mealy potatoes
  • 500g of floury potato
  • 2 egg yolks
  • 1 tablespoon of melted butter
  • 140g of flour
  • nutmeg powder & salt
  • 8 apricots & 8 sugar cubes
  • For the breadcrumbs: 1 tablespoon of butter
  • 150g of breadcrumbs
  • 40g of sugar
  • ½ teaspoon of cinnamon
  • For the vanilla sauce: orange and lemon zest
  • 250g of milk
  • ½ of vanilla bean
  • salt
  • 60g of sugar & 60g of cream
  • 2 egg yolks
  • 12g of cornstarch

Step 1. To cook the dough, take the potatoes first, peel and cut them, then boil in salted water. Once ready, take them out of the saucepan and mash with a potato press.

Step 2. Add the yolks, a pinch of salt and nutmeg, and blend with the liquid butter. Knead the mixture briefly by hand, then add the wheat flour, and roll out. Cut the dough into squares.

Step 3. Carefully remove the apricot pits and put the sugar into each fruit. Wrap the sugar-stuffed apricots with the dough and boil the dumplings in salted water for 16 minutes.

Step 4. To make the breadcrumb coating, mix the melted butter with the breadcrumbs, sugar, and cinnamon. Fry briefly in a pan until light brown.

Step 5. For the vanilla sauce, combine some milk with the zest, salt, and vanilla, then bring to a boil. In a pan, mix the sugar with the cornstarch, add the yolks, then pour the rest of the milk.

Step 6. Add the vanilla milk to the yolk mixture and boil off. Let it cool down a little, then add the cream.

Step 7. Once cooked, take out the dumplings from the water and cover generously with the prepared breadcrumbs. Place them on a plate and pour with the vanilla sauce.
